3 Steps To A Perfect Roast
A well-cooked juicy roast is a necessity - for your family, your partner and your friends (well, not so much now in Iso, but you know what I mean!)
Getting it right can be a bit hit and miss, so we've done the hard work for you and broken it down into 3 easy, full-proof steps!
1. SEASON your roast to give it flavour. You can keep it simple with the usual suspects - salt, pepper, oregano, thyme and garlic.. OR you can go a little fancy and whip up a moroccan marinade, a texan style rub or asian glaze - yum!
2. SEAR your roast before you put it into the oven. This is critical as it creates a golden skin barrier to avoid losing that precious juice. (You don't need to sear your pork roasts!)
3. REST your roast! Resting it once it's finished cooking allows the juices to be reabsorbed and redistributed back into the meat so every mouthful is as juicy and tender as the rest.

4. PORK - make sure you thoroughly dry your pork skin with paper towel and then only smother it with good quality salt.
